Shannon attended the University of Utah where she received a B.S. in Speech Communication with a minor in Peace and Conflict Studies and an M.S. in Communication Studies with areas of emphasis in Critical Cultural Studies, Critical Rhetoric and Food Studies. Her current areas of interest examine intersections of communication, culture(s), food, sustainability, and health, with respect to assessing the material functionalities through which these discourses inform disparate critiques of the global food system; and, the varied, generally countervailing, calls for political and social reformations, as taken up and articulated within food, sustainability, and farming movements. She volunteers with various food-related students groups on campus, in addition to mentoring students who are interested in nutrition, food, and sustainability inside and outside of the Department of Nutrition and Integrative Physiology. Currently, much of her work addresses health disparities and food insecurity within local populations of people experiencing homelessness. Shannon also likes to do urban and backcountry foraging, gardening, backpacking, hiking and camping, and playing as much as possible.
